Cookie Pops (Bis-Sticks)

I have been fascinated by the idea of cookies on a stick for so time now. So I went out got some supplies a decided to give them a try. 
After a lot of searching I found a recipeI liked at Allrecipes.com, a recipe I think is perfect for a stick. I like this recipe because it is not too sweet and the cookies are a nice, soft texture. 
I refer to them as Bis-Stick because a friend insists that's what they should be called because they are biscuits on a stick...lol. Here in Trinidad were refer to cookies as biscuits.
After the cookies baked, I glazed them (see recipe below). For the pink glaze I substituted watermelon flavored juice for water. It gave the glaze a nice, unique flavor.

Here goes the recipes:


Bis-Sticks
1/2 cup butter (softened)
3 oz cream cheese (softened)
1 cup white sugar
1 egg
1/2 tsp vanilla essence 
2 1/2 cups all-purpose flour
1/2 tsp baking powder


Cream together the butter, cream cheese and sugar until light and fluffy. Add in the egg and vanilla essence.
Combine the flour and baking powder and mix into creamed mixture. 
Divide the dough into two pieces, cover and chill until firm. (I place the dough in the freezer for an hour)
Preheat the oven to 375 degrees F.
On a floured surface, roll out cookie dough to 1/4inch thickness, and cut out desired shapes with a cookie cutter (you have to work quickly).
Place cookies one inch apart on lined cookie sheet. Insert lollipop stick into cookie.
Bake for 7 to 10 minutes until cookie bottoms are light browned.
Remove from cookie sheet and cool on wire rack.
Decorate as desired.


Please Note: This dough is soft and sticky. You have to refrigerate for a couple of hours for dough to be manageable, and once out of the refrigerator you have to work fast with dough.




Cookie Glaze
 1 cup confectioner's sugar
1 tsp cream of tartar
1 tbsp water, milk or fruit juice
desired food colouring


Mix the cream of tartar, sugar and liquid together. Add food colouring to achieve desired colour. If necessary add more liquid or sugar to achieve desired consistency




I'm thinking of giving these as gifts for Valentin's Day.
